This is a recipe that comes straight from mom and it is so incredibly simple that anyone can do it. It’s also a lighter spin on the classic cheesecake recipe so it’s perfect for summer. Serve this after a meal outside on the patio and your dinner guests are guaranteed to love it.
Graham Wafer Pie Crust
- 1 1/2 cups graham cracker crumbs (from about 9 whole graham crackers)
- 1/4 cup packed brown sugar
- 1/2 teaspoon cinnamon, optional
- Pinch of salt
- 7 tablespoons butter, melted
Mix dry ingredients in a 5″ x 8″ baking pan, add melted butter and mix well then press firmly in the pan. Bake at 375° for 7 minutes. Remove and cool completely. I put it in the fridge or freezer to cool faster.
- 1 Pkg cream cheese
- 1 Pkg Dream Whip
- 1/2 cup sugar
Mix the cream cheese until nice and soft and add the sugar, set aside. Mix the dream whip as directed on package, then when it’s whipped and ready add it to the cream cheese mixture and mix again until blended well.
Put this mixture over the graham wafer crust.
For the topping you can do anything you like. For this version we used fresh strawberries. You can use any pie filling you wish (one can will do) or fresh fruit of your choice. I’ve used apple pie filling and cherry pie filling and both are excellent.
The easiest dessert you’ll ever make and everyone loves it.
