Wednesday Night Kitchen Raid: Easy Pasta Salad (Bonus Content: Camping!)

Hello again! It’s been a long four days and I missed you all terribly. You’ve all become my second family and I’m excited to show you pictures from my camping trip. My computer is still being wonky (I guess I shouldn’t have tried to stream Game of Thrones) so I have to write this post on my phone (the tragedy)… I’m not happy about it but what can you do? Desperate times call for desperate measures. Anyways, if there are a lot of typos or the formatting is off, that’s why.

Back to the content of the post, the recipe today is super easy and something I brought camping because it travels well. Pasta salad! There are many variations of pasta salad and this one is probably the most basic but when you’re camping, easiest is usually best. I’ll get right into to recipe and then I’ll share some camping photos with you.

Ingredients

1 box of pasta (I used rotini)
2 cups of vegetables (I used orange peppers and cucumber)
2 tablespoons olive oil*
2 teaspoons balsamic vinaigrette*
1 teaspoon each salt and pepper (or to taste)

*I used 2 tablespoons of this Garlic Expressions Classic Vinaigrette, which is absolutely amazing and delicious but hard to find, so a mixture of olive oil and balsamic works as well.

Directions

Cut your vegetables into bite size pieces, cook your pasta according to package directions and mix everything together.
Eat.

It’s the perfect camping/pot luck food because it’s easy, delicious, uses what you have on hand and takes next to no time to make.

Now it’s time for… CAMPING!

We had such a fun time. Right off the bat, I knew it was going to be an awesome trip. We went into Canadian Tire, which is kind of like Walmart but a thousand times better, and I noticed something I hadn’t noticed before…

They had wildlife scenes everywhere with, I’m guessing real, stuffed animals. That’s a touch of class right there.

Next we drove 2 hours to get to the park and this is the sign at the entrance…

But I wasn’t really nervous.

I planned the trip for my husband for his birthday, so we had a couple friends join us. We had so much fun. It was refreshing spending some time away from technology, talking, playing board games, laughing till we almost peed (and then having to walk 10 minutes to the outhouse), having some drinks, sitting by the fire and all that fun stuff. We were at Silent Lake Provincial Park (which does sound like it could be in a horror movie) and it is so beautiful there! We will definitely go back next year.

It was calling for rain so we tarped the heck out of our campsite. Worked out pretty awesome cause when it poured later, we had our firepit covered so we could sit outside and have a fire and the rain didn’t bother us.

So there you have it. Five days of camping. It really was great and we had an amazing time but I was really happy to come home and shower, write this post and catch up with all of you. I missed you lots!

  1. Canadian Tire rules! πŸ™‚ Yours is even more awesome. That camping trip looks awesome. On our way back from Toronto, we were jotting down all the Provincial parks and going to research some hiking trails. Haha! I think we’ve done a lot of the Quebec ones.
    Oh yeah, and that Canadian Tire reminds me of Bass Pro Shop in Vaughan Mills. Haha! My boyfriend looked like he went into wonderland…all that excitement. πŸ˜‰

      1. I’m so terrible with sports! Haha! This is an old version so the entertainment category if called Good Times and it’s all about TV shows and bands from and 80s and earlier. I usually get the questions if they’re about movies but I don’t know enough about 80s sitcoms apparently, haha!

      1. I checked out your YouTube channel. I know it can get frustrating at times when you don’t get the views and subs that the more popular YouTubers have, etc. but be patient and keep making videos. Marques Brownlee only had 78 subs after 100 videos. The key is to find a topic you’re passionate and knowledgable about; then just keep making videos. The ones who do watch your stuff like it and think you know what you’re talking about, so that’s a huge part of it there. You will have YouTubers that fail, but usually it’s b/c they make terrible videos, whether it’s bad content or poor camera/microphone issues. You have a good set-up. You just have to be persistent and patient.

      2. So… Did you like it or not like it? I’m confused with this advice, I wasn’t struggling with youtube? Seems like a back handed, I checked out your stuff and it sucks and you don’t have many views but it might come eventually lol.

      3. If I thought it was bad, I would either not say anything or just tell you what needed to be changed to improve, etc. I wouldn’t tell you to keep making videos. I think that’d be a disservice to tell someone to keep making videos if their videos were bad. I saw your blog first, and scrolled the home page and saw your entry where you were considering quitting you blog b/c numbers were low, etc. I saw one of your options was asking if you should give up your YT channel; this is what made me think you weren’t satisfied with it. I assume you’re making YouTube videos b/c you’d like it to be your full-time job at some point; so I am saying I think you can get to that point if you stay persistent and patient. I can tell you’re the passionate type who can get frustrated when things get tough, and basically you need someone to let you know what you’re doing is worthwhile, or you start to question it yourself. I am simply letting you know your efforts are worthwhile and to press-on when you start to feel doubts.

      4. So I have read this comment a couple of times and there are a few things that are bothering me. You have come in contact with me for less than 6 hours however in this amount of time you have deduced that I need validation of what I am doing is worthwhile and that I struggle when times get tough. I absolutely don’t struggle when times get tough, nor do I need validation. I was only asking about the blog/youtube because I didn’t want to waste other peoples time or clog their feeds with things that don’t matter to them. I am always open to constructive criticism, but I don’t think it’s fair to tell someone who and what they are after looking at 5 or 6 video clips. I know you likely have the best intentions and I do appreciate your feedback but it’s pretty harsh to tell someone they basically don’t have a back bone until someone gives them one.

      6. I never said you don’t have a backbone. When doing anything on social media, whether it be YouTube or a blog, or whatever, we need to hear from others that what we’re doing is worthwhile, or we start to question what is the point. This is the case with anyone; including you. I don’t need to know you a long period of time to be able to tell you that. if Melissa sent out all of these movie and recipe articles on this blog here and no one ever Liked or commented, she’d eventually question whether it was worthwhile; b/c she gets readers and commenters, etc. that lets her know it is worth it.

        Judging by your YouTube “About” page and from the menu of videos you are putting out on your channel, I would assume you want to get enough subs and views, etc. to be able to do this full-time. When you look at other YouTubers doing tutorials, etc. getting thousands and ten-thousands and hundred-thousands and millions of views, etc. and then you’re only getting a couple hundred views per video, it can be disheartening…and so being able to identify your personality (the deep thinker, analytical, sensitive, passionate, caring) I know your personality-type has the tendency to become frustrated when things don’t go as you had hoped. I don’t “know” you’re frustrated. If I recall correctly, on my prior comment I said I know you “can” become frustrated – and when I said you I was referring to your personality type. I know your personality type can become frustrated. I also know your personality type can be impatient at times. Again, I am saying “can”. Not saying you “are” for sure.

        I know people with your personality type. I know the tendencies, strengths and weaknesses. If you have not been frustrated or impatient regarding your YT channel, then that’s awesome and you need not to take anything into consideration I have said. But I thought that in all likelihood you probably have been a bit frustrated, and I know your personality type can quit due to frustration…

        And all I wanted was to tell you NOT to quit if you were experiencing frustration; and that I believe your channel can succeed and get you the subs and views you desire if you stick with it. THAT was ALL I was trying to convey. I was trying to encourage you. Not discourage you.

        I also know your personality type has the tendency to focus more on the negative than the positive. This even seemed to be the case with my comments. You even stated “I know you likely have the best intentions” but yet you seemed to only be able to focus on what you interpreted to be negative. You discarded the positive and the negative is what stuck with you. The negative is what you felt. All the encouragement I was trying to pass on was passed over by what you felt was negative even though you acknowledged you knew I had good intentions.

        Admittedly, I was in a bit of a hurry when writing those messages, so perhaps I didn’t convey myself as well as I wanted.

        I just figured that when I saw your blog entry about potentially quitting, the frustration was setting in. And all i wanted to do was encourage you to press-through and keep going b/c I believe your channel can succeed.

        That was all.

        I probably should not have even looked at your channel in the first place, but I did b/c I am developing my own channel and like to look at other channels, even if the channel theme is totally different from mine.
