So, remember how I was talking about the Eggnog Doughnut Cookies being a great, light alternative to all the heavy Christmas goodies? Well, this is exactly what I was talking about. These bars are so rich and delicious that by the time I finished “testing” them I was so full! I had to, though, for your benefit. I couldn’t post a recipe that wasn’t 100% delicious and this one really is. I’d go as far as to say that it’s my favourite baked good of the holiday season. I could eat this all day long, but then I’d weigh 300 pounds. Sigh.
Christmas Eve is 10 days away! Can you believe it? I can’t. It’s come so quickly this year. It’s funny how so much thought and preparation can be put into a day or an event and then before you know it, it’s come and gone. But this is life. And, luckily, Christmas comes every year! I just finished ALL my baking over the weekend and it turned out so well! I like to give a small tin of baked good to close friends and family for Christmas gifts so be prepared for a couple sweet recipes coming your way this week and maybe even a couple next week leading up to the big day.
Howdy all, and happy hump day! I have something up my sleeves that is going to make your midweek that much better. Anyone out there that loves baked goods as much as I do? There’s something so much more satisfying about eating a muffin for breakfast than eating fruit. As many of you know, I get a weekly organic fruit and veggie basket delivered to my house. Prior to doing this, I really didn’t eat that much fruit. I would have the odd banana or an apple here and there but I now have so much! All the time! And I just can’t keep up. So I decided to make a recipe that would use up some of the fruit I had laying around. The result = delicious!

And what better than red and white cupcakes? Brilliant, I say! Also, these strawberries came in my organics basket this week and they are locally grown, right here in Ontario. Look at how patriotic I’m being. I also just love cupcakes and strawberries.
Happy summer, everyone! Well, almost anyways. I live in Canada near Toronto, where it’s freezing cold pretty much eight months of the year. This February was the coldest on record! What’s up with that? It was honestly so bitterly cold that all I wanted to do was go to work and come straight home. It made even simple things, like grocery shopping, a dreaded excursion. Do any of you live somewhere that gets cold like this? It’s awful. As such, when it finally gets warm out we go outside and enjoy the weather as much as we can while it lasts.
This is a recipe that comes straight from mom and it is so incredibly simple that anyone can do it. It’s also a lighter spin on the classic cheesecake recipe so it’s perfect for summer. Serve this after a meal outside on the patio and your dinner guests are guaranteed to love it.
