Wednesday Night Kitchen Raid: Egg & Chickpea Salad with Homemade Lemon & Garlic Vinaigrette Dressing

Wednesday Night Kitchen Raid: Egg & Chickpea Salad with Homemade Lemon & Garlic Vinaigrette Dressing

Happy New Year! Time to eat healthy and get back on track after all those Christmas baked goods. This salad is one of my all time favourites so make it and eat it and love it. Cheers!

The Creative Fox Den

Looking for something healthy and delicious for dinner tonight? You’ve come to the right place. I’ve been experimenting with salads lately and I must say that this one is certainly a winner. Salads are so versatile, you can throw a couple ingredients together, add some lettuce and you’re done. The problem I have is that I have an insatiable appetite and salads just don’t do it for me. I’ll have a gigantic serving, feel really good about all the healthy choices I’m making and then hear my stomach rumbling 15 minutes later. I can almost hear it’s muffled cries for pizza. Not with this salad, though! The chickpeas and the eggs are very filling and it’s delicious to boot.  You won’t be feeling anything but satisfied after eating this one.

Wednesday Night Kitchen Raid |Slow Cooker Pot Roast

Wednesday Night Kitchen Raid |Slow Cooker Pot Roast

So, up here in Canada the weather is getting a little colder, the days are getting shorter and the desire to do anything at all when I get home from work is getting smaller and smaller. You know what that means? It means that it’s time to bust out the slow cooker, the best small kitchen appliance of all time! Nothing is quite as satisfying as coming home after a long day (especially when it’s dark and cold outside) to the smell of deliciousness and your food being hot and ready for eating. Just writing this makes me happy and what I made in my slow cooker this week made me even happier. Pot roast. Two of the most delicious words of all time.

Wednesday Night Kitchen Raid | 2 Pesto Dishes

Hello lovelies! I know the recipes have been a little lacking lately so today you get two for the price of one. Lucky devils. What brings about this joyous news? you may ask. Well, it’s my unwavering love for pesto. Remember when we made all that pesto and froze it into an ice cube tray? If not, check out that post here. In that post I promised to give you some ideas on how to use that pesto. Albeit, that was at the end of June and it is now November but better late than never I always say!

Wednesday Night Kitchen Raid | Delicata Squash Lasagna

Good morning, everyone! Today’s recipe is particularly delicious and can be made in one night and feed you for the rest of the week (depending on your appetite). This lasted my husband and I for three dinners and we didn’t get sick of it because it was just that good! This was 100% a kitchen raid. I had so many vegetables piling up that I needed to get rid of so I decided to make a giant veggie lasagna. I did add some ground chicken to it for some lean protein but you could just as easily leave it out if you’re a vegetarian and I’m sure it would be just as scrumptious.

Wednesday Night Kitchen Raid | Beer & Cheddar Soup

Are you ready to have your mind blown? I sure hope so because this just happens to be the best darn soup of all time… or it could be tied with my French Onion Soup, it’s hard to decide. Either way, you’ll see colours when you eat this soup. It’s that good. In all seriousness, you’ll probably only be able to eat this once a year because it’s terribly sinful but it’s worth every single calorie.

Hello, lovelies! Today’s post is going to be a quick one. The photos and the salad in general speaks for itself. This recipe has been a favourite in our family for a long time. My mom invented it years ago and it really is so delicious. I love mom inventions.

Wednesday Night Kitchen Raid: Creamy Garlic Mashed Potatoes

Wednesday Night Kitchen Raid: Creamy Garlic Mashed Potatoes

This recipe is dedicated to my dear blogging friend, Emma, who LOVES potatoes. These ones are delicious. So much so that the night I made them I had planned to also make some corn and pork chops but I ate so much of these mashed potatoes that I couldn’t eat anything else, I was so full! So, all I had that night was potatoes. I regret nothing. Anyways, if that isn’t a testament to how great these potatoes are, then I don’t know what is.

Welcome back to another Kitchen Raid! This one is delicious and incredibly easy.  I pretty much made it up on the spot and it was so good. Don’t you love it when that happens? I do have to apologize for the picture quality though. I’m using a different camera than I usually do and this one just isn’t cutting it.

Hello, everyone!  I hope you’re having a wonderful day and I hope you like zucchinis (sorry, Eric) because today’s recipe is all about them. I must admit, this recipe isn’t quite as delicious as my Zucchini Bites but it is about ten times easier and healthier so it’s good have on hand. And they’re pretty delicious in their own right.

Wednesday Night Kitchen Raid: Healthy Banana Blueberry Muffins

Howdy all, and happy hump day! I have something up my sleeves that is going to make your midweek that much better. Anyone out there that loves baked goods as much as I do? There’s something so much more satisfying about eating a muffin for breakfast than eating fruit. As many of you know, I get a weekly organic fruit and veggie basket delivered to my house. Prior to doing this, I really didn’t eat that much fruit. I would have the odd banana or an apple here and there but I now have so much! All the time! And I just can’t keep up. So I decided to make a recipe that would use up some of the fruit I had laying around. The result = delicious!
