It’s summer and that means that almost everything in our household gets made on the barbecue. There’s nothing better than doing 15 minutes of prep inside and then moving out to the patio and just sitting and relaxing outside while cooking up your dinner. Well, I don’t think there’s much better. It really is the little things sometimes.
Last night I decided to reorganize my whole kitchen. I went grocery shopping and came to the shocking realization that nothing in my kitchen was in the right place and I HAD to reorganize it. I switched up my whole pantry, cleaned out my fridge and my freezer, the whole nine yards. Afterwards, when everything was finally in its place, I still had to make dinner and I promised myself that I wouldn’t order a pizza (have I mentioned how much I LOVE pizza?). So I made this. It’s easy, it’s healthy and it’s delicious. Make it tonight.
This was the best decision I’ve made in a long time. I made the biggest pasta bake and it was so delicious that I really didn’t mind having it for dinner three nights in a row. You know what that means? That means I didn’t have to cook at all two nights this week. That’s a big deal. Not that cooking is a huge hardship but it’s nice to know that there is a well rounded homemade meal waiting for you when you get home and all you have to do is heat it up.

Good morning, everyone! Today’s recipe is particularly delicious and can be made in one night and feed you for the rest of the week (depending on your appetite). This lasted my husband and I for three dinners and we didn’t get sick of it because it was just that good! This was 100% a kitchen raid. I had so many vegetables piling up that I needed to get rid of so I decided to make a giant veggie lasagna. I did add some ground chicken to it for some lean protein but you could just as easily leave it out if you’re a vegetarian and I’m sure it would be just as scrumptious.
Are you ready to have your mind blown? I sure hope so because this just happens to be the best darn soup of all time… or it could be tied with my French Onion Soup, it’s hard to decide. Either way, you’ll see colours when you eat this soup. It’s that good. In all seriousness, you’ll probably only be able to eat this once a year because it’s terribly sinful but it’s worth every single calorie.

This recipe is dedicated to my dear blogging friend, Emma, who LOVES potatoes. These ones are delicious. So much so that the night I made them I had planned to also make some corn and pork chops but I ate so much of these mashed potatoes that I couldn’t eat anything else, I was so full! So, all I had that night was potatoes. I regret nothing. Anyways, if that isn’t a testament to how great these potatoes are, then I don’t know what is.
Hello, my lovelies! I’m so sorry I missed a few posts earlier this week. I’ve missed you all terribly. I went to Kelowna, BC to visit my mom and I thought I would have time to whip up some posts each morning but my mom packed our schedules so tight, there just wasn’t time. So many activities!
