I know, I know, I know… I said I was back on track and then I went a week without putting up a post. It is so hard to get back into a routine once you’ve let it slide. I feel like a broken record but I really am (mostly) back on track now and I actually have A LOT of projects lined up. I’ve been going to yard sales (my favourite!) and I have lots of stuff to show you so please keep posted! Now, all that aside, I’ve also been whipping up some to-die-for recipes (and they’re healthy!) that you are going to love. This just so happens to be one of my recent favourites.
Hello, my lovelies! I’m so sorry I missed a few posts earlier this week. I’ve missed you all terribly. I went to Kelowna, BC to visit my mom and I thought I would have time to whip up some posts each morning but my mom packed our schedules so tight, there just wasn’t time. So many activities! Anyways, to make up for it, I’ve got the best dish I had on my trip and I’m going to share it with you. This was honestly the BEST. I will never go back to eating corn on the cob any other way. And this chipotle butter!? Forget about it.
I love ribs. They’re juicy and delicious. This rub makes them even more delicious. It’s incredibly easy and comes from my mom, so you know it’s good. I’m actually going camping for a couple days starting tomorrow (I’ll miss you guys!) and I’m bringing ribs. We’re really roughing it. I’ll bake them beforehand (this will all be explained in the directions) and just thrown them on the grill before dinner.
Hello and happy Monday! I had a great, relaxing weekend and I hope you did too. I made a white wine sangria over the weekend, so keep posted for that recipe which will be coming later in the week. I’m feeling excited about the blog and catching up on all of your posts that I missed over the weekend. It’s a good day. Sometimes you need a couple days of not doing anything to recharge your batteries. I made this potato salad last weekend when I had my dad and his girlfriend over for dinner and it was delicious. I can’t claim it for my own though. This recipe is my aunt’s and she gets asked for it ALL the time. So next time you’re going to a BBQ pot luck, you have a great recipe for a dish you can bring.
- 5-6 medium/large red skin potatoes cut into bite sized cubes
- 1/4 cup sun dried tomatoes, diced
- 2 tablespoons of oil from the sun dried tomatoes
- 3 sprigs of green onions, sliced
- Bacon bits (as much or little as you like)
- 2 parts mayonaise to 1 part sour cream (use this as a guidelines depending on how much you use in total. I like mine a little drier so I used 1 cup mayo and 1/2 cup sour cream but you can add more if you like it creamier)
- 1 tablespoon balsamic vinaigrette
- Put your potatoes in a pot and add enough water to cover them. Add 1/2 teaspoon of salt and bring to a boil. Decrease heat to medium high until the water is at a gentle boil and continue to cook for about 15 minutes or until they pierce easily with a fork.
- Drain your potatoes and put in a bowl. Mash about 1/4 of the potatoes in the bowl (it will make your salad creamier) and then add the remainder of the ingredients.
- Mix well.
Happy Monday! Well, as happy a Monday as a Monday can be. Lucky for you, I have a great recipe for some delicious summertime sangria. I made this for a BBQ that we hosted over the weekend and it was a huge success. It’s so easy and I used some leftover fruits that I had laying around. It’s really versatile that way; you can use whatever fruit you have at hand. Some flavours go together better than others but you can make it any way you like. Let me know which fruits you use in your sangria.
Who doesn’t love a great steak? Not me, that’s for sure. I could eat steak every day. I like to experiment with different flavours and marinades but I really hit the jackpot with this one. My search for the perfect marinade is over, and just in time for summer.
